With a homemade pesto you are always good, try this one with broccoli!
Food processor or blender
2 1/2 cups uncooked whole grain pasta
1/2 cup fresh basil
1/2 cup arugula
1/2 cooked or steamed broccoli
1 clove garlic
Juice of half a lemon
1/2 cup olive oil
1/2 cup walnuts
1/2 cup nutritional yeast flakes and few tbsp for garnish
salt and pepper to taste
Cook the pasta in boiling water with a dash of olive oil.
Put all the other ingredients together in a food processor and blend until you get a creamy pesto mass.
If your pesto is too dry, add some water or extra olive oil while mixing.
Place the pasta on 2 plates and scoop the fresh pesto over it. The pasta will warm the pesto, but if you prefer you can also heat the pesto in the microwave for a minute.
Walnuts can be replaced by pine nuts or hazelnuts
