A delicious and easy salad for lunch or as a side dish.
1 1/2 cup lettuce
1 1/2 cup arugula or young spinach
1 cup cucumber in strings
3 tbsp spring onions
1/3 cup blueberries
2 tbsp roasted hazelnuts
pepper and salt
Halve the cucumber along the long side and use a thin slider to cut strings of it. Cut the avocado and scoop half out, cut into slices and season with pepper and salt.
Mix the vegetables with the blueberries and roasted hazelnuts and sprinkle with olive oil.
The blue berries give the salad a slight sour taste that suits perfectly.
Buy roasted hazelnuts to save time.
