Creamy Onion soup

4 SERVINGS

MATERIAL

cooking pot
non stick pan
blender

10 medium size white onions
1 onion for garnish
1 or 2 garlic cloves
1 liter vegetable broth
2 tbsp all purpose flour
1 medium size potato
2 tsp lemonjuice
250 ml oatmilk ( unsweetend)
fresh parsley
salt and pepper to taste

Sauté the onions in a pot in a little bit of oil until slightly browned. Add the flour and stir well for about 2 or 3 mins. Add the diced potato and garlic and the vegetable broth/water.

Bring to the boil and then simmer for 30 minutes.  Mix the soup in a blender, add the lemonjuice, oatmilk and season to taste with salt and pepper.

Cut the small onion in slices and bake in some vegan butter or olive oil, use this for the garnish with some fresh cut parsley.

TIP:

Add croutons!
