1 parsnip
1 yellow bell pepper
2 yellow carrots
3 or 4 potatoes
2 yellow beets
1 tsp tumeric
2 tsp sage fresh or dried
1 tbsp garam masala
1 clove garlic pressed
2 tbsp onion powder
6 tbsp olive oil
Preheat your oven to 180° C (356° F).
Peel all the vegetables and cut parsnip in fries, bell pepper in large strings, potatoes in cubes, beets and carrots in slices.
Put all in a large bowl.
In a small bowl add the olive oil and all the other herbs. Mix well and pour over the vegetables, again mix well so everything gets all the flavours.
Lay everything in an oven dish and bake until potatoes are soft.
Approximately 30 mins will do.
Serve with fresh foccacia.
TIP:
Add green beans if you like!
