Homemade fluffy focaccia

FOR 1 LARGE FOCACCIA OR 2 SMALL

MATERIAL

oven
bread machine ( optional)

330 gr bread flour
4 gr fast-action dried yeast
15 gr vegan butter ( not melted) or 1 tbsp olive oil
4 gr salt
180 ml water ( about 20°C)

Preheat your oven to 180° C (356° F). When it’s warm, turn the oven OFF.

Mix the flour, yeast and salt in a large mixing bowl.
Pour in the water and olive oil. Stir everything together with a large wooden spoon.
When the mixture has mostly stuck together turn the mixture out on to a work surface or bread board.
Knead the mixture by holding one end of the dough in one hand and stretching it out with the other hand. Reform the dough, turn it 90 degrees and start again. Repeat this for 10 mins.

If you have a bread machine, let the machine do this work for you. 😉
Lay baking paper on a baking tray. Flatten and shape the focaccia into 1 or 2 breads with your hands. Leave the dough in the oven ( OFF) , cover with a kitchen towel and let sit for about an hour until it has doubled it’s sice.

Take the focaccia out of the oven and coat with olive oil, figs, walnuts and onion or make a mixture of olive oil, pressed garlic, thyme, rosemary and salt.
While you finish the focaccia turn the oven back on and pre heat at 220°C (430°F).

Bake for about 10 to 15 mins, but check frequently!

TIP

Olives and tomatoes are also great!
