Red cabbage soup with almondmilk

FOR +/- 2.5 L SOUP

MATERIAL

cooking pot
mixer / blender
1/2 fresh red cabbage,chopped
+/- 300g  leek  chopped – only the white part
1 large potato, peeled and cut into 4 pieces
1700 ml of water
3 vegetable broth cubes
3 tbsp onion powder
1 large clove garlic
cayenne pepper to taste
salt
black pepper to taste
100 to 200 ml almond milk
olive oil
Heat oil in a large pot on medium heat. Add the red cabbage, leek, potato and pepper. Stir for a few minutes and add the water and vegetable broth.
Bring to a boil over medium heat and till potatoes are tender.
Let the soup rest for a couple of minutes and then mix it very well.
Add the onion powder, salt, black pepper, cayenne pepper and almond milk. Be careful, taste often so the soup does not get too spicy, unless you wish so …
