Blueberry pancakes

2 TO 3 SERVINGS

MATERIAL

mixer
non stick pan
750 ml soy milk
250 gr of flour or spelt flour
1 tsp baking powder
dash of olive oil or melted coconut fat
3 tbsp vanilla sugar
salt
2 cups blueberries defrosted
coconut oil
Mix all ingredients in a bowl, except for the blueberries.  When batter is mixed, add the blueberries.
Heat the pan and add a little coconut oil if necessary.
Spoon the batter into the pan, and cook until you see the edges starting to turn golden brown (about 3 minutes or so).
Flip pancakes and continue to cook until done, about 2 more minutes.

Make a nice pancake tower, kids will love this!
