MATERIAL

heavy-bottomed pan
SMOKY CAULIFLOWER
1 cauliflower head small
2 tsp onion powder
2 tsp chili powder
1 tsp garlic powder
1 tsp cumin powder
2 tsp smoked paprika powder
pinch of salt
olive oil
MANGO SALSA
1 small mango in small cubes
1/2 red bell pepper in small cubes
1/2 red onion diced
fresh parsley or cilantro
1 tbsp lime juice
Break the cauliflower into bite-size florets. In a small bowl mix all the spices together without adding any olive oil.
Heat up olive oil in a medium, heavy-bottomed pan. Fry the raw cauliflower for about 10 mins and add the spice mix. Stir well for another 10 to 15 mins so every piece gets the smokey flavor.
In the meantime, prepare salsa by combining all ingredients in a large bowl. Refrigerate until ready to use.
To prepare tacos, toast tortillas on heated skillet or oven. Fill with cauliflower and top with 2-3 tbsp of mango salsa. Add anything you desire, like fresh tomatoes, avocado,… Enjoy!

The mango salsa is a must! Also great with guacamole 😉
