Easy cauliflower-curry

This is a super easy and fast curry that warms the heart

2 SERVINGS

MATERIAL

large non-stick pan

3 cups Cauliflower florets cooked
1 cup carrot in slices
1 onion chopped
1 cup baby corn in smaller pieces
1 can coconut cream
1 clove garlic minced
3 to 4 tbsp curry powder
1 tsp cumin seeds
1 tsp salt
1/2 tsp cayenne
2 tbsp turmeric
4 tbsp cilantro fresh
coconut oil ( or olive oil)

Heat oil over medium heat in a heavy bottom pan, add cumin seeds, onion, garlic and saute until onions are light brown. Add cauliflower, carrots and corn. Stir well and add all the spices except the cilantro.
When melted pour in the coconut cream and mix everything well. Taste and add more curry, salt or cayenne when necessary.
Serve with cooked rice and naan bread.

TIP

You can always add potatoes in the curry!
