More often I hear that once you become vegan or go for a plant-based diet, your taste buds change. Not any different for myself, I use to hate te taste of dill, now I can’t imagine a life without it 😀
3/4 cup soy yoghurt or dairy-free coconut yoghurt
5 tbsp fresh dill
6 tbsp lemon juice
3 tbsp minced garlic ( or more 😉 )
1 tsp salt
1/2 cup cucumber cut in small cubes
Lay the cucumber on a paper towel and press gently to absorb the excess water.
Combine the yoghurt, garlic, dill, lemon juice and salt. Add to your food processor and mix until smooth. Taste the mixture and add if necessary more salt, lemon juice or garlic. Add the cucumber and put in fridge for at least one hour.
