Pasta with veggies

2 SERVINGS

300gr spaghetti or other pasta
4 roma tomatoes in cubes
1 red onion in strands
1/2 zucchini grated
2 cloves garlic chopped
1 1/2 grilled red bell pepper
1 1/2 tbsp lemon juice
4 tbsp nutritional yeast
3 cups arugula
1 tbsp  fresh basil
1 tbsp thyme
olive oil

Heat up olive oil in a medium, heavy-bottomed, pan. Fry onion until softened, translucent and lightly caramelized. Next add tomatoes, zucchini, red bell pepper and garlic. Bake until the tomatoes melt and add lemon juice, nutritional yeast, basil, thyme and set aside.

Boil the pasta and add it to the veggies. If necessary add a bit of olive oil. Stir for another 5 mins and season with pepper and salt.

Before you get the pan of the fire, stir in the arugula and serve immediately.

TIP
Add some black olives if you like!
