Bruschettas

As an appetizer, side dish or as a snack but always a success!

MATERIAL

oven

7 to 10 bruschettas

1 kg ripe Roma tomatoes
2 cloves garlic, very finely chopped
5 fresh basil leaves cut into thin strips
2 tsp balsamic vinegar
7 to 10 pieces of baguette slices
olive oil or soft butter
1 clove garlic

Heat the oven to 175 °C (350°F).
Cut the tomatoes in to cubes removing the seeds.
Combine tomatoes, balsamic, chopped garlic and basil in a bowl and stir. Season with pepper and salt. Set aside in the fridge to cool down until the bread is ready.

Coat the pieces of bread on both sides with some olive oil or softened butter. Bake them for about 5 to 10 mins in the oven, check often so they do not turn black ;).

Cut the garlic clove open and spread along the top of the buns. Spoon the tomato mass gently on the sandwiches and serve.
